Recipe for chilled cucumber and mint soup. Perfect prebiotic and digestive aid this summer

We had our latest Long Table Wellness Day on Sunday in Maleny.
The focus on the day was Summertime wellness and stress relief during the hotter months and through the festive season.
We covered some great topics and made some cooling after sun aloe vera and coconut skin therapy.
We also had an awesome antipasta for lunch with this recipe for Cucumber and mint soup to start. This soup is the perfect digestive aid and helps with essential prebiotics and probiotics to help you assimilate nutrients easier.
Its always great to have prebiotics and probiotics as part of your meal.
Cucumber is very high nutrients and is literally 95% water, so they are super hydrating. They are also full of vitamin C and beta carotene. Cucumbers have loads of antioxidants in them and act as an anti inflammatory. We made this recipe with mint, digestive aid, digestive deodorant and also calming for digestion.
RECIPE FOR CHILLED CUCUMBER SOUP. RAW VEGAN and REFRESHING ON A HOT DAY.
Please note you need to assemble the soup the night before serving. It takes 12 hours in fridge for emzymes to break down in the soup.
What you need to make soup for 6 people
1. 6 organic large cucumbers.
2. 2 red onions
3. 2 cloves garlic
4. a bunch fresh mint
5. 1 tablespoon non MSG vegetable stock powder ( we used massell)
6. 1/2 chilli
7. Juice of three lemons
8. 1 cup coconut natural yoghurt. ( or dalry natural yoghurt if preferred)
HOW TO MAKE SOUP.
1. Dice the cucumber, mint, onion, garlic into very fine small pieces and place in large glass jar.
2. add in diced garlic and the stock powder, other spices as you like and lemon juice.
3. Mix well and place in cold room/ chiller/fridge for 12 hours to 18 hours.
4. Take out of fridge and just before serving mix in the coconut yoghurt.
Easy and delicious. Enjoy!
