We have all heard about the health benefits of Kombucha, Its a prebiotic, fermented drink that aids in digestion and liver wellness. Your whole digestive tract benefits from drinking Kombucha as it helps ease the process and keep your gut flora healthy and vital.
Here is my recipe for home made Kombucha that tastes amazing and works a treat. The original recipe came from Shaye ( Little House seamstress) who got it from Geraldine ( eco bee wraps) and thats the lineage of my scoby! All I did was follow the first part of the recipe and then I added herbs in the second fermentation and played a little champagne game by following some traditional French champagne making methods! So, its "methods Kombucha"
What is a Scoby.....
Symbiotic Culture Of Bacteria and Yeast. Yes, its natural and you can find them in apple cider vinegar bottles.... " The mother" thats the floaty bits that are the scoby. To make your own at home simple take a bottle of commercial Kombucha and add in equal parts of black tea with sugar in it that has been cooled to room temp. Then cover with a gauze or fabric lid so it can breathe and wait a week or so and let it grow. The easiest way to make Kombucha is to have a friend who already makes some give you some scoby. Once you have the scoby heres what you do!
I make 2 litres of strong black tea and add in 1/3 cup of raw sugar. I let it cool down and then pour it over the scoby which is already sitting in about 4cm of its original mix.... or the last fermentation of Kombucha.
Then I let it sit on the kitchen bench for seven to ten days covered in a tea towel or fabric to allow it to breathe but also keep dark and safe from insects.
Then I pour the liquid into a 2 litre bottle, add in 30 to 50 gras of raw sugar, 60 ml of my herbal extract of choice. Turn the bottle upside down and allow the second fermentation process to take place which gives it the flavour and the bubbles! I leave this one on the bench for another week, and then pop in fridge to cool before drinking.... Yummm.
Whenever I make a new batch I put some of the old batch in it.... and whenever I make a new batch or go to the next stage of fermentation I have all stages ready to go at once, so its a rotating process.
