Hello and welcome to my blog, 

Today I want to share with you my recipe for a delicious warming soup.

Immune Boosting vegetable coconut soup 

What you need

Your favourite soup pot.  I’m using a 8 litre pot for this ratio of ingredients.

Enough fresh raw vegetables to 3/4 fill the pot when they are peeled and cut into bite size pieces. These include carrots, pumpkin, onion, sweet potatoes, peas, cabbage, broccoli, beans, whatever you have in the garden.

5 cloves garlic

1/2 teaspoon chilli flakes or chilli to taste

1 tablespoon Golden Zing Tea formula. Contains turmeric, ginger and black pepper.

1/2 cup of cashew nuts or nuts of your choice.

3 tablespoons monounsaturated oil such as olive oil or macadamia nut oil.

2 tablespoons apple cider vinegar

2 teaspoons sea salt ( or more or less. salt to taste)

1 litre of coconut milk liquid.

How to make soup

Heat pot on stove with slices of garlic, olive oil, sea salt, golden zing mix, chilli, and allow to soften for a few minutes. Then add the peeled and cut up vegetables all together and stir.

Allow the vegetables to simmer in the pot for about fifteen to twenty minutes, stirring occasionally.

Then pour in the coconut milk making sure it covers the vegetables. Add in the cashew nuts and apple cider vinegar at this stage too.  Place a lid on the pot. Turn the heat right down so its gently simmering.

Allow to simmer on the stove stirring for about one or two hours. You can leave it simmering for up to three hours before you eat this soup, it just gets softer and more yummy.

Add more flavours you like to this soup if desired. And also add freshly sliced shallots, parsley, mint and fresh herbs when you serve.

Today we are serving this soup with some delicious warm cheesy gluten free muffins and having a glass of wine too!

How does this soup boost your immunity?

The garlic is super healthy as we know it purifies blood and strengthens the body, its a cardio tonic and also is a super antioxidant.

Most vegetables have immunity in themselves. Yes its true, plants have their own immunity to fight bugs and diseases and when we eat vegetables we are generally boosting our own immunity too. The  autumn winter vegetables choices of brassicas, such as Brussel sprouts, cabbage, broccoli and rocket all have immune boost and antioxidant properties. Onions are my favourite with silicylic acid that pulls poisons and foreign particles out of the body cleansing and strengthening the body. When we add chilli we are striping poisons such as viruses, and toxins from the digestive tract every time we eat chilli. We are also boosting our metabolism which in turn has a faster reaction rate to toxins and that means when we have a faster metabolism we have a faster reaction time with our immune system. No sluggishness. Ginger and turmeric have super antioxidant effects and help the liver cope much better with detoxification. Every vegetable soup you make is a winner. The cashew nuts are some good protein in there to help balance the soup and adding coconut milk is a winner for flavour, strengthening and nourishing your body and protecting your cells from damage as we eat this antioxidant rich soup.
