Making herbal salts, delicious and exotic

The world of herbal medicines is always fun! We get to be true alchemists as part of our work, and of course this carries right into all of our lives. 

Have you ever met a herbalist who doesn't like to play in the kitchen.? Yes , we call it KITCHEN WITCHEN! and that was the working title of my book THE MAGIC OF FOOD AS MEDICINE. Today I want to share another recipe from the book and I hope you make it! I like to keep my recipes simple and doable, so that you can make them and enjoy them with no fuss and lots of fun!

We have for you our recipe from THE MAGIC OF FOOD AS MEDICINE book. Chai herbal salt! Yes, its a real thing and you will love the diversity of flavour this salt offers your food. 

Heres the recipe to make today! 

100grams of salt to 30 grams of herbs and spices is the ratio. 

or 1kg salt to 300 grams of herbs and spices. 

Here we have used large flakes of Australian sea salt and added the freshly ground chai spices from  the herbal dispensary. You , of course can put whatever you like into yours! 

From the Kitchen we added 

100 grams of sea salt flakes, ( or you can crush larger pieces to get the size you like) 

30 grams of mixed chai spices that have been ground, or make to a powder. Depending on how fine you want them to spread in the salt. 

We added Chilli ( because I love chilli ) Black pepper, cardamon, star of anise, cinnamon sticks and cloves. Yumm. 

Now just stir it all together and place in a air tight jar, Label it and put the date on the jar! Its that easy. Sprinkle on your meals.

The magic is in the variations. Using fresh herbs will bring out the flavour more than dried herbs. So whatever is in your garden is perfect. Imagine some mint salt with your roast vegetables! mmmm. yum. 

If you are using fresh turmeric and ginger roots, then wash them well and grate them. Or if you are using the dried herb, powder is better for roots as they tend to get tough and hard to chew. 

Add some essential oils to the salts. This is super armomatic. One drop of cinnamon oil to the 100 grams of salt is enough to spread through the whole recipe. Black pepper, clove, and basil are other great choices to add to the salt. Only one drop as you want the aroma, not the strong pungency of flavour that will overpower everything else. 

Also add a dash of natural food colouring.... think blue spirulina, spirulina, turmeric juice, only a dash! 

Use citrus peels, like lemon and orange...delicious and also aromatic.
