Carrots are so perfect for cleansing and nourishing your body!

We just love carrots. And these ones are our favourites, small heirloom varieties that are fresh on the bunch full of those juicy green tops plus succulent young carrot roots.
We need to cleanse our livers and freshen up our body for the spring season. Its my favourite time of the year to work with carrots. Because they are so small, succulent and you can eat the whole product. Including the green tops.
There are so many health benefits to carrots, My favourite is the betacarotene which is one of the most powerful liver cleansers. If you have fatty liver ,congested liver, any toxins in your liver then carrots are your best friend to help remove the gunk and lighten your load. They are a great weight loss aid too as they remove the poisons and extra dead weight in fatty acids as part of a controlled diet.
Make carrot salad carrot juice and put carrots in all of your meals. Cooking carrots doesn't diminish their wonderful properties either. As cooked carrots are full of antioxidants and radical scavengers that go in and cleanse your body. You keep all the fat soluble vitamins and minerals and only loose the water soluble vitamin C when you cook them. So either way, raw or cooked carrots are fabulous.
Roasted carrots, carrot soups, carrot cakes, carrot dips, carrot everything.
Now you might want to use the green leafy tops too. They are full of chlorophyl, potassium and fibre. They are nourishing and delicious. We cut them finely and use in our salads. We stream them and eat as a hot vegetable. We juice them and drink them. They almost taste like carrots!
Carrots are famous for keeping our liver clean and they really do reduce fatty acids in the liver, this can result in reduced cholesterol levels in your blood too. Carrots have the magic ability to strip the fats from the liver. My favourite recipe is to mix in lemon juice with the carrot and that really helps strip fats, mucous and congestion from your body. Plus as mentioned earlier they are free radical scavengers and that helps remove heavy metals and toxins from your body.
They are rich in many vitamins and minerals including vitamin C. carrots are so good for us. Each carrot has an average of 4 grams of sugar.... so they are not low GI. But, lets be our own physicians and use lots of carrots in our diet while they are so seasonal and fresh. the health benefits are phenonimal.
The antioxidants in carrots are betacarotene and alpha carotene. These both are fabulous antioxidants and all antioxidants help with cardiovascular/ heart health. The high levels of specific fibres in carrots which are rich in potassium have an ability to help relax muscles and help relieve tension in the body, this results in lowered blood pressure in some people.
Enjoy them now while in season , local and fresh.
